
No British Christmas is complete without a Christmas Pudding. Everyone
needs a great recipe, and this is my favourite recipe. This is the British
recipe:
Make several weeks ahead- Preparation time 45 minutes – Cooking time 8
hours
115 gr. breadcrumbs (briciole di pane)
55 gr. almonds blanched and chopped (pelate e tritate)
115 gr. flour; rind of ½ lemon
grated
230 gr. suet ; pinch of salt
230 gr. currants ; pinch of mixed spice
230 gr. sultanas ; 1 grated apple
230 gr. raisins ; 3 large or 4 small eggs
85 gr. Candied peel ; 15-16 cups stout (birra scura)
115 gr. demerara sugar (zucchero non
raffinato)
Method : mix all the ingredients together except the eggs and stout. Beat the eggs
in a bowl and add the shout. Pour the egg mixture on to the other ingredients
and stir them together. Put the mixture into a 1l pudding basin and cover with tinfoil . Steam
for about 6 hours taking care that the saucepan does not boil dry. Remove the
pudding from the steamer and keep in a
dry cool atmosphere until required. On
the day it is to be eaten return it to the steamer and cook for a further 2
hours.
Curiosity
Christmas pudding contains small objects each of witch has a meaning: for
example if you find a coin in your slice you will become rich, if you find a
ring you will get married.
